I went to make my favorite oat muffins (see one of my first posts, I've had those muffins nearly every day of my pregnancy) and realized I didn't have any eggs! In searching for an alternative to going to the store, I ran across these "cookies", though given the healthy contents they're more like cookie/mufffins (and very breakfast appropriate). Whipped em up in 20 minutes, they're pretty tasty, more fruity than sweet. I was missing 1 banana, so I mixed in half an apple in it's place (I'm wild), as you'll see.

3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups oats, 1/4 cup almond milk, 1/2 cup raisins (optional), 1 tsp vanilla, 1 tsp cinnamon. Bake at 350 degrees for 15-20 minutes.
